Babaco
Description
A natural hybrid relative of the common papaya, originating from Ecuador. It is a cold-hardy, seedless, and faster-growing alternative that thrives in cooler, subtropical climates. It can tolerate temperatures down to -2℃ but it cannot survive hard or prolonged frosts. It is best grown in protected areas or containers.
The tree flowers young and it produces large torpedo shaped fruits all year round, with effervescent flesh - giving it a nickname "champagne fruit". They have a citrusy acidity that meets a refreshing melon flavour, but have also been compared to strawberry, papaya, kiwi and pineapple. The texture is light and refreshing, incredible juicy and the smooth golden skin can be eaten.
The whole fruit can be made into a tasty thirst quenching drink. It makes a good meat tenderizer due to its high papain content. When sliced across, the fruit is star-shaped, so it makes an attractive addition to platters. It’s relatively low in sugar, so serve it with a light dusting of sugar to really bring out the flavour.
