Well known for its sweet anise-flavour, all parts of this plant are edible and pair beautifully with rhubarb.
Seeds are a little anise-bomb and are a perfect little snack or palate cleanser. Leaves & flowers are fantastic raw in a salad, as a garnish, tea or used to flavour syrups, alcohol, desserts, jams - you name it.
Thick, edible, parsnip-like taproots can be boiled as a vegetable, eaten raw in salads, or used to make wine, offering a sweet anise flavour. Historically, the roots were used to treat wounds and digestive issues.
Leaves have a strong anise aroma when crushed, so it's easily distinctive if planted amongst other similar umbellifers.
Growing to 1m (3ft) high.
