Description
Deep-rooted perennial growing to 1m high which comes into growth early in the year. The leaves have a good flavour (mild cabbage in spring but getting hotter) and can be used in salads or cooked.
To consume as a broccoli substitute, flower buds and young stems should be harvested in spring, just before they open into yellow flowers. The roots can be used raw, often grated or thinly sliced, and have a sharp, pungent flavour similar to horseradish.
The plant produces large, branching clusters of small, fragrant, bright yellow, four-petaled flowers, which make a great addition to bouquets.
