Toon

Deciduous tree (often coppiced as a bush) with attractive pinnate foliage, flushed pink when young, turning yellow in autumn. Peeling bark.

Seedlings and young shoots are edible raw, tasting of 'beef and onions' and older leaves can be cooked and make a delicious stock. Leaves are rich in protein and antioxidants.
